Dried mushrooms will provide some nutritional benefit, but we prefer and recommend fresh mushrooms for maximum nutrition. We would recommend you check your local grocery, many of which are now carrying fresh organic mushrooms, including some Asian varieties. One variety that we prefer and recommend for nutrition, health benefits and availability are shitake mushrooms.
Vitamin C is not known to interact with, or inhibit calcium absorption. Research is not entirely clear on the relationship between iron and calcium, although most studies show problems with iron absorption when too much calcium is present. Since too much calcium in this case usually means 300 milligrams or more, this iron-calcium interaction is not likely to cause practical problems in most food situations.

We prefer and recommend using olive oil as your primary oil of choice due to its many health benefits. However, we do not recommend cooking with oil because the heat damages the oil and nutrients. While we have not evaluated the research in regards to nutrient levels or health benefits associated with cabbage fermentation based on other research on food fermentation we know that fermentation may improve the digestibility and/or bioavailability of nutrients from food.
