To cube butternut squash it is best to cut in half between the neck and bulb. Then peeling it is much easier. Peel with potato peeler. Once peeled cut the neck into slices. If you want 1 inch cubes make each cut about 1 inch apart. Cut each slice lengthwise again. Turn and cut across the strips so you end up with the desired size squares. Cut bulb in half and scoop out seeds. Slice into 1 inch slices and cut again across slices about 1 inch apart.
