WHFoods Menu: Quinoa, Kale and Herb Salad
This tasty combination of kale and quinoa adds a powerful nutritional punch to your World's Healthiest Foods Menu.
Prep and Cook Time: 10 minutes
3/4 cup cooked quinoa at room temperature (use cooked quinoa from Day 3)
1 cup kale or Swiss chard, shredded
1/2 cup tomato, diced
1/4 cup parsley, chopped
2 TBS red onion, diced
2 TBS fresh basil, chopped, or ½
tsp dried basil
1 tsp fresh rosemary, chopped
1 TBS pumpkin seeds
1 heaping TBS golden raisins
salt and black pepper to taste
2 TBS Mediterranean Dressing
Mix kale with Mediterranean Dressing in a large bowl and let marinate while you prepare the other ingredients.
Toss other ingredients with the kale mixture. Taste and add a pinch of salt and pepper if needed.
